RECIPE

A recipe is a set of instructions
that show how to prepare or make
something, especially a culinary
dish (food).

Modern culinary recipes normally
consist of several components:

The name (and often the locale
or provenance) of the dish.

How much time it will take to
prepare the dish.

The required ingredients along
with their quantities or the
proportions.

Equipment and environment needed
to prepare the dish.

An ordered list of preparation
steps.

The number of servings that the
recipe will provide.

Some recipes will note how long
the dish will keep and its
suitability for freezing.

Earlier recipes often included much
less information, serving more as a
reminder of ingredients and proportions
for someone who already knew how to
prepare the dish.

Nutritional information includes:
food energy (calories),
vitamin content,
fat content, etc

COOKBOOK

A cookbook is a book that contains
information on cooking, and a list of
recipes.

It may also contain
information on:
ingredient origin,
freshness,
selection,
quality.

While western cookbooks usually group
recipes for main courses by the main
ingredient of the dishes, Japanese
cookbooks usually group them by cooking
techniques (e.g., fried foods, steamed
foods, and grilled foods).

Both styles of cookbook have additional
recipe groupings such as soups, sweets.

SLOW
FOOD

The Slow Food movement was created
to combat fast food and claims to
preserve the cultural cuisine and
the associated food plants and seeds,
domestic animals, and farming within
an ecoregion.

It humorously describes itself as an
"eco-gastronomy faction" within the
ecology movement.

HERBS
AND
SPICES

HERBS

Herbs are seed-bearing plants without
woody stems, which die down to the
ground after flowering.

Herbs have a variety of uses including
culinary, medicinal, or in some cases
even spiritual usage.

The green, leafy part of the plant is
often used, but herbal medicine makes
use of the roots, flowers, seeds, root
bark, inner bark (cambium), berries and
sometimes the pericarp or other portions.

General usage differs between culinary
herbs and medicinal herbs.

By contrast, spices are the seeds, berries,
bark, root, fruit, or other parts of the
plant, even leaves in some cases; although
any of these, as well as any edible fruits
or vegetables, may be considered "herbs"
in medicinal or spiritual use.

Culinary herbs are distinguished from vegetables
in that they are used in small amounts and provide
flavor (similar to spices) rather than substance
to food.

SPICES

A spice is a dried seed, fruit, root,
bark or vegetative substance used in
nutritionally insignificant quantities
as a food additive for the purpose of
flavoring, and indirectly for the
purpose of killing and preventing growth
of pathogenic bacteria.

Spices are distinguished from herbs, which
are leafy, green plant parts used for
flavoring purposes.

SPICES

The terms "spice" and "herb" have both
been used to describe parts of plants
(possibly dried) that are used to enhance
the flavor or taste of food.

In addition, herbs have been used to augment
cosmetics, preserve foods and cure illnesses.
